  2. Wayne and I eat meat maybe only once a week, so I've an arsenal of vegetarian-type dishes. Here's one of my favorite go-to combos:

    Toast a slice of whole wheat bread (something rustic--not found in the general bread aisle)

    Top with 1 poached egg

    Top the poached egg with my bruschetta mix (1 chopped tomato, 1/2 a shallot, 1-2 Tablespoons of olive oil, a pinch of salt and freshly ground pepper)

    Top the toast, egg and mix with 3-5 asparagus spears (grilled, roasted or boiled) to create a pyramid--or, put on the side

    Crumble gorgonzola atop it all


    I eat it for breakfast, lunch or dinner! Yummm!

  3. This sounds really good Joanna! I've just added asparagus to my grocery list. I'll be giving this recipe a try later in the week. This sounds too good to wait until next Monday!
