Here's what I've been making (about every other week since I discovered the recipe) for a tasty evening meal: Moroccan Carrot Soup, available on the following web site:

Skip the whole procedure for toasting and grinding the cumin seeds. I sprinkle already ground cumin atop the soup: it's just as tasty, and a lot less work.
Last Monday, I paired the soup with the California Veggie Sandwich that's available in the current edition of Everyday Food Magazine (available at the library).
Yuuummm!
I printed out the recipe and shopping list for Moroccan Carrot Soup. It sounds very good and I plan to make it for Meatless Monday. Also, may check out the veggie sandwich recipe.

I made the carrot soup and thought it was very good. Guess I made it a Meatless Sunday.

Yes--I LOVE cumin. I use it a lot in soups...and Mexican style dishes. My other favorite spice is curry, which also tastes good with pureed vegetable soup. I've tried it with carrot, broccoli and cauliflower.

Cumin is not one of my favorite spices but I think I will still give the carrot soup a try.
